Right in.. I was trying to say I've cleaned that same crap out of 2 qt condo pump reservoirs on regular ducted systems.. never gave it a thought except one time I realize it caused the pump to fail or at least I thought it did

Boiler for heat could be your culprit. If it's releasing steam it's also likely releasing what I call boiler nasties which is a mixture of water and the remnants of the boiler piping. In other words the black water.
This steam can actually contain huge amounts of microscopic iron particles that actually remain airborne and will settle on the cold evaporator.
Then possibly clog up the drain.
I've never seen a case as bad as you are describing, but I did have one where an air handler was close to the steam vent and the iron in the air rotted out the a coil in 3 years.
You don't squat with your spurs on.
And you NEVER put the torches away before pressure testing.
