Anybody know about a Hatco Flav-R-Savor ?
A couple years ago, against my better judgment, I roughed out a food truck for a local rib guy. I try to avoid doing any service in Florida but he stopped by yesterday or the day before and said his "wet box" was bad. Somewhat inarticulate and a crazy Mississippi accent - but I think he said: "Water gits inna bottom!"
Free standing unit, manual water fill, and I am guessing; some electric heaters.

What is this thing supposed to do?
What controls it's operation?
Controls in the top have wiring like ugly spaghetti, and there is a small open-windings motor (like an evaporator motor on a small reach in) off to one side.
What does the motor do?
What controls the motor?
Why does this thing even need a motor?
Anybody familiar with these things?

The Flav-R-Savor holding cabinet keeps prepared food warm while maintaining proper texture with humidity.

What controls it's operation?
A hot air thermostat and a humidity (wet) thermostat.
What does the motor do? Why does this thing even need a motor?
Circulates the mixture of humid air throughout the holding cabinet. The motor would also prevent any condensation from settling onto certain food products (e.g., biscuits, pizza, etc.)
What controls the motor?
The on/off switch (if I remember correctly)
Inside the water reservoir is a float switch to prevent dry-firing of the tank's heating element and to power a low water light when water gets too low. Only distilled water should be used to refill it. Otherwise, limescale quickly builds up, fouls the float switch movement...and other problems.

Based on the owner's 'descriptions' off the problem and your comprehensive explanation of the SOP it seems likeliest that the fan is not operating. Which apparently operates all the time that the unit is working properly.
I have to clear some space but I'll (hopefully ) roll it today and see what the deal is.

Do you have access to a wiring diagram for this unit?
What does the enclosed reply do? Is it that the float switch 'up' powers the relay coil and closes the NO relay contact which then powers the resistance heaters? And so the float switch 'down' opens the NC relay contacts and so protects the heaters from burning up?
Originally the blower motor was powered / not running but I tore the blower assembly apart (because I superficially thought an evaporator blower motor kit I have in the truck would work to replace it) and ended up oiling the bearings with garage door track lube. The original motor now runs the blower OK - although the ball bearings are noisy - but the enclosed relay continually chatters. So much so that I first thought it was the alarm sounding.
There are three wires to the float switch - is it SPDT ?
BTW: raising and lowering the float switch seems to do nothing. The relay just keeps on singing the same tune.

PHM, Hatco doesn't publish wiring diagrams (that I know of). I'm sure that FSHC had one under its hood at one time. They list the wiring diagram in their parts manual as something which can be ordered.
It's been a dozen years since I've worked on one, so I must rely on my memory and imagination to try to help.
Yes, I think the float switch is a SPDT. Here's my guess as to how it works:
- Its UP position should energize the ice cube relay and de-energize the low water light (or fill solenoid valve, if it has an auto-fill feature). I'm thinking the humidity thermostat and the relay contacts are probably connected in series. So long as the thermostat is calling for heat, the relay sends power to the water tank element.
- Its DOWN position should disable the relay (hence, the tank element) and send power to the low water light (or fill solenoid).
Hatco sells a tube of oil for the blower motor bearings and they state that the motor should be lubricated every three months (Yeah...right!).
