This was marinated since last Sunday and I cooked it tonight. The marinade discolors the outer edge so it doesn't look as perfectly pink as it tastes. It was so tender and amazing. I do think that 3 or 4 days is optimum for this.
I am going to have to not cook this for a while or i won't be able to fit in tight spaces any more..
