    I used to be almost like her. Very concerned about everything that can harm health. I've been a plumber for 15 years. The work you describe is too much in my opinion and not guaranteed. I'd recommend a house prefilter and/or an RO system installed under kitchen sink. I use that for drinking and cooking.

    First step is to take a sample from where the water enters in the house, then take a second sample from the kitchen faucet. then see the result if the test results are same then the source is not the house. If she wants a re-pipe service , then I recommended her the contact with professional plumber for plumber service.

    This is personal, you care about this relationship and are trying to convince yourself to do it. Sounds like a fun way to spend time with people you care about, I would still get them to replace any consumables at cost, like gas and solder used. As far as PEX goes, around here we had a lot of water leaks due to PEX crimp fittings not holding up to the freeze. Do it and have fun, I hope the crawlspace has more room than mine, I need a shovel to get under the joist...
