grease duct installation for commercial kitchen

Hi, I'm new to this forum but it appears quite informative.
I have recently been awarded a restaurant job for a/c and kitchen exhaust ect. I have been trying to bone up on the grease duct installation and want to make sure I do it right - this is my first one - so I don't want to mess this up. It is multiple duct runs into one exhaust. I would like to know if I should go with welded duct and fire wrap or with the Selkirk ceramic insulated pipe. Any advice or direction to manuals or instructions would be greatly appreciated. If I get this job right there could be more in the future - and I am always willing to learn. This job is in the Fort Worth area. Thanks.

Have you checked with your local health department? There are local/state health codes that lay out lots of building/equipment specs. I don't know if your specific question will be one of them, but it's possible. It's also possible that an experienced health inspector will have an educated opinion.

Depending on your local codes... you may need to be permitted first by the state authorities or the county where you are doing the work.

Contact your Warm Air Contractors Licensing Board. They can provide you with the info you seek.

They will also require you to pass periodic installation inspections and show your exhaust and make up calculations along with your blueprints.

NFPA publishes construction and installation standards, I'll dig through my stuff and see if I can find a publication number.

grease duct

The owner hired an HVAC engineer who mapped out the specs that I have to Adhere to ie exact placement of hood and curb/exhaust fan. i was just trying to find info and/or tips on installing the welded grease duct from the hood to the fan. I understand some third party will pressurize it with steam to search for leaks. And I also believe I'm supposed to use 1/16th inch mild steel with gentle angles and inspection doors along with the expensive fire wrap This is new construction and the make-up air and exhaust air have been tightly calculated and I am working with the local inspectors. It's hard to find info on grease ducts installation. Any advice? thanks.

The design of the duct/hood/fan/locations should already be designed by an engineering company or Architect. You shouldnt have to get into this detail. You just quoted install (I assume).

NFPA 96 adresses all the specifics of what needs to be done. Metal needs to be 16Ga welded and wrapped or Selkirk as you state. Typically welded and wrapped is cheapest option. Selkirk type systems get $$ fast as they are pre-engineered and require fabrication lead time. If the Selkirk is damaged on site you have to order and wait for a new one.

You can find information on wraps from Thermalceramics.com. Their product is called FireMaster FastWrap+.

International mechanical code accepts both wrapped and Selkirk-type ducts.
