So it may never get used. In my experience this would not only apply to an "untidy" store, but to just about any store these days.
When I worked for a market chain, I was told to go to a newly remodeled store to size up an exhaust fan for the fish department. This particular store was in a very wealthy area and just happened to be where most all of the top management shopped. The CEO's wife had complained about the smell in the fish department. It was readily apparent that the odor emanated from the iced fish case. To management, including my boss, the store manager and the meat manager all knew that it needed an exhaust system installed above the case along its full 24 ft length.
Now I'm no fish expert, but my mother always bought fish at her cousin's fish market the day the boats came in, and she told me, "Fresh fish doesn't smell bad."
So I talked to the crew in the fish department. I asked about the freshness of the fish and they said that it was always quite fresh when it came in daily and it sold quickly, so it didn't sit around very long. So I figured if it's not caused by bad fish then what?
I asked how often they top off the ice in the case and that answer was at least twice a day. When I asked how often they cleaned the case they said they're supposed to always clean the case when they change the ice.
"...And how often is that, may I ask?" They said they hadn't changed the ice yet, just topped it off.
The new fish department had been open nearly a month.
Did I win that one? Nope. I gave a company a time and material order to install an exhaust system that will be quiet, out-of-sight and removes the odor.
I here ya icemeister, never could stand that smell. I've got a small grocery store I service and it's just as fishy. They use flaked ice and I have no clue when or if it gets changed. They've got other creatures I can't believe people eat. It's always funny to here the bullfrog's yacking

He ended up keeping this unit and filled it with donuts , then bought a real refrigerated display case and put beside it full of cheeses
