    guessing? Is a new filter system your first quote for this new contract?!

    I've never worked on one, but would that be a boilerless combi that uses spritz to generate steam?

    If that's what happens, then that picture depicts exactly what I envisioned could happen...and why I've advised our culinary folks to steer clear. All of our combi ovens are Rationals, so they all use a boiler.

    Yes, thats 100% a spritzer style combi. Pretty much every spritzer looks like that unless the customer has a good filter system and regular maintenance.

    The gas units end up with more scale simply because the surface area of the of the heat exchanger is greater than that of the electric elements. And that scale will flake off during cooking cycles, especially in hot air mode, and get into the food. Couple that with the wet steam that a spritzer is known to produce and you can get some poor cooking results.

    But spritzers are cheaper to purchase and cheaper to service so you can see why they are desirable to some people.

    LOL, It has a RO system maintained by them also.
