Cooking with alcohol. The beer is for the roast and the bourbon is for the cook.
3-1/2lb Chuck roast
3 large onions chopped thick
Chopped Garlic
2 tbls instant coffee
Crushed red pepper
1 can tomato paste dissolved in 1-1/2 cups of hot water
Salt and pepper
4 tbls olive oil
1 bottle Guinness
6 carrots cut into pieces
fresh parsley
Brown the roast in the olive oil, remove and salt and pepper both sides. Saute the Garlic in the same olive oil, and add the tomato paste water mixture, the coffee, and the red pepper and simmer for a few minutes. Put the chopped onions in the bottom of the crock pot, put the meat on top. Pour the tomato paste concoction on top. Add parsley and carrots. Add the beer. Cook in the crock pot on high for 3-4 hours while sipping bourbon.

Don't forget the Larceny Bourbon. Yesterday was the first time I ever had it. Much better than Makers or Woodford at a similar pricepoint. Oh, and the carrots were still pretty hard at 3-1/2 hours. I cooked a total of 5 hours in the crock pot
