    Reverse seared T-bone for new years day

    2" T-bone seasoned with sea salt and Chicago steak seasoning(don't ask what's in it cause I don't know). Put into a 275* oven at room temp on a rack. Baked 45 minutes. Pulled out and let rest under foil for 10 minutes while the skillet heats up. Sear 2 minutes each side for a perfect fillet.Name:  sear3.PNG

    If you were a real tech, you'd solder a relay on that board and call it good to go.

    I do a triple evac with nitro to remove non condensables.

    I use 56% silver on everything except steel.
