    Another brisket

    Coals are getting hot, got some mesquete and Apple wood. Will try and take pics as I go

    Me too. The smoker was free and I use it more than the one i paid for...

    Nice. I use my Weber kettle as a smoker all the time. It works great, but space is a little limited. Since one side gets the coals, I’m left with half for the food. Here’s a corned beef brisket I smoked on St Patricks Day.

    I have that same Brinkman smoker 20 plus years old and still going. I did add seals on it so it doesn't leak smoke near as much.

    I have a Big Tex which can have a Smoker Add-On mounted. The Grill has a lot of rust for being 1 year old.

    Haven't tried corned beef yet. I think I'm happy with my ribs. Wanna try something different on my tri-tip, and thoroughly enjoy the brisket but still experimenting. Wrapped it about an hour ago. Gonna be a good lunch week.

    I bought the bigg @ss brinkman gas grill off a lady for $200. She paid $4k at Costco and through in the smoker. Heck I only use the gas to sear in the sauce for ribs.

    Could have given it another hour but that was the time I had. Great flavor just not as much "fall apart" as I want. Good enough for today's sammich.

    Brisket is one of our favs, now just two of us in the home and we have been smoking more tri-tips
