    In-House Techs, Post Your Shop!

    This is where I am considered the Small Equipment Division of our company, Refrigeration Equipment Company, Inc. of Yakima, Washington. It
    is a work in progress, but I call it home. I'd like to see some of you guys post pictures of your shop or work area. We've already done van setups, so this one of for the In-House guys.

    I do the self-contained refrigeration equipment, but more of the food-processing type. We DO test equipment with product whenever necessary, like bakery revolving-rack ovens. I once baked 72 dozen cookies in 20 minutes to confirm even temperature top-to-bottom. I cooked an entire turkey in a pressure fryer, peanut oil, of course. The shop guys love it when I am in test mode. I've made bread from scratch many times. This week it's gonna be pizza conveyor oven testing time.

Size:  165.3 KBToday I finally got to test the CTX DZ33 pizza oven. It doesn't employ a blower, only radiant plates and it gives the option of four heating zones: top left, top right, bottom left, top left. The pizza was excellent. Ran it through at 625F for 7 minutes.

    i cook pizzas at 350 why is that oven so hot?

    The oven came to me set at 625 for 7 minutes, double the temp and half the time that the take & bake said to do, and it was about the best pizza quality I have seen.

    i see and agree as some places do set the ovens hotter
    so when can i come and get my pizza
