Could be a bad cold control. Could be the wrong one.
If it uses a coil temp cold control the probe that rests inside the coil could have come out.
Some sense coil temp and some sense box temp.

I've got a True work top fridge that turns into a freezer when not opened for awhile (ie, we're closed for 2 days and when I come in after those 2 days, it's a freezer. During the week, when it's in use, it hovers above freezing, but I do have it the temperature control all the way to the warmest setting. Any ideas or suggestions? Thanks.

I'd check cold temp control to start. As stated by others.
In addition to above mentioned. Also check both condenser and evaporator; is it clean?, are both fan running ok?, is it properly charged?.
