I take about 3 to 4 ounces of lean ground beef, add about half a package of taco seasoning to it and cook it in the pot, add in a small diced onion when the meat is almost done.
The a can of diced tomatoes and jalapeno peppers, drained, is added. After about three or four minutes, I add two cans of refried beans. Got stir this several times as the beans are a pain to incorporate into the rest. Once the beans are hot, I add a few ounces of shredded Mexican cheese, the type that has several different cheeses mixed together in a bag.
Once all the cheese has melted and the dip is stirs easily, I put some in a bowl to eat with chips, and the rest I put into small sealable containers. It stays good for about three or four days, and to reheat, pop the lid, add a tablespoon of water, place the lid without sealing and toss into a microwave for 30 seconds at a time, stirring in between until it is hot.
