Ok, so let me ask you this if you had replacement parts for water heaters do you think most would be universal in reagrds to a commercial water heater and a residential water heater?
See I have the following:
Flue tubes (I know it is for gas powered)
Bottom head and top head discs (not sure what these are)
burner supply tubes
heat traps
baffles
MAIN CONTROL PC boards
There isn't a water heater chat sight out there is there?

I have a really huge deadline to meet. I am pissed about it, but what can I do? With taxes, Sept 15th is almost as big as April 15th. One of my bosses wants me to get this stuff done so badly they offered to watch my son for me. (Personally I think that is jacked up)

Yes, you could. I guess it depends on what kind of valve it is. Is it a check valve used to keep the water flowing in one direction Or a relief valve designed to open up if the water gets under to much pressure? There are many types of vavles.AC system use a lot of the same type of parts because they are needed for the same reasons.

Most of those parts sound like they are residential/commercial.
Some parts can be interchangable like thermocouples and even gas valves but not necessarily all. Like the auto industry, most manufacturers use some OEM parts. You should know in your line of work that is "Original Equipment Manufactured" or "Manufacturer". This just means that the tires on your Ford Excursion will probably fit a GMC Suburban(generic manufactured or knockoff), but the fenders and bumpers won't (OEM).
OEM parts, to a contractor, are dealer/manufacturer supplied items that basically fit only one type of manufactured system or unit. (I.E. some circuit boards, tubes, valves, etc.) These parts can be built by a speciallist or generic manufacturer, like Honeywell, and designated solely for the use of one OEM, like Carrier, Rheem or Lennox. The OEM pays for that exclusive right and may own those rights under trade laws.
Some generic manufacturing companies, after a legal amount of time (I don't know how long, usually years), can offer for sale a knockoff of the same part, but it will have to be in their interest to do so. It all depends on the OEM what parts they will use in production, OEM supplied or generic and in this case, quite often, size alters the part requirements.

ACR (refrigeration) no, even though the plumbing pipe sizes are roughly the same as ACR, they are designated differently. 1/2" plumbing becomes 5/8"ACR and so on... so no.. (V)ACR is not Plumbing and Heating.

the valves you refer to could be the Gas valves used on the hot water tanks to control the gas to the burner, or they could be a pressure/temperature relief valve for the hot water tank.
by the way a three inch black nipple is work about the same as a white one
