First easy question: A geothermal system takes a thermostat for a heat pump correct?
Second question: What brands are decent and what brands should I not even consider?
Third: Given that all I really want are some basic controls like temp, humidity, reducing energy consumption while I'm at work, and minimum down time.......any recommendations for a particular model?

Heat pump thermostat is correct. Some Geo units require a 3 stage heat, rather than the normal 2 stage.
I like the higher end Honeywell programmable with touch screen control.

Not really..depends on if you'll be adding supplement heat or not.
If not all you need is a stat that will energize the reversing valve coil.
