Control smoker temp with old fan limit?

Trying to modify my Brinkman Charcoal smoker. Want to put an air shutter on the dome that moves automatically when it gets too hot. Thinking of using an old fan limit with bimetal helix to twist open and close a metal shutter like the webber grills use. Any ideas?

I think you'd want to run it inside a shroud (pipe) to keep the gunk off it so it stays accurate. And I wonder if it would be strong enough to move the damper linkage or would it send current to a solinoid on the damper?
