How about chicken "cord-on-blue?" (absolutely sure I spelled that wrong.)
Basically it is a skinless chicken breast. Pounded thin. Roll up a slice of ham and a slice of swiss cheese inside the chicken breast.
Then roll the whole thing in flour and then in an egg bath. Next deep fry it until golden brown. If you de-bone the thights you could do the same thing. You'll need a meat dicer.
