I have a couple rolls of copper that I have had for about 2 years that I have had in my storage shead{unconditioned}, would these rolls be ok to use in the residential application?

I would be a little wary of using them if they had the plastic caps on th ends,if they had the rubber plugs I would pull one and see what it looks like. Either way if you do put in a filter drier than you will plan on changing once or twice.
