The term “Jerk” comes from the term “Jerky,” which comes from the Spanish “Charqui” (char-key), which is meat cooked over a slow wood fire. I installed a wood firepit in the backyard with grates, and I do loooove cookin chicken over a real wood fire, less flareups than the ol gasser.
