one of my jobs has a very special machine that takes veggies fresh pulled from the fields

this special machine combnes a 100 ton condenser with giant evaporators in a big pool of water

the machine is about the size of a semi truck, maybe a little longer

the refrigeration part of the machine cools water that is sprayed down onto a conveyor

the veggies are loaded on to a conveyor belt

then run through a gigantic area that sprays cold water on all the veggies coming through the conveyor

this process eliminates all of the "field heat"

i have been told this process makes the veggies last much longer

evaps sit right in the pool of water, easy to find any evap leaks

i will see if i can get you the name of the manufacturer or installer

only seen this special machine at one packing house

Are you planning on doing this in the field or at a packing house? What kind of produce? how many tons per hour? If in the field do you have 220 volt power available? If in a packing house or plant do you have 3 phase power available? How much fresh water available? Is the product pre cleaned or dirty,(potatoes, carrots etc) is a water bath going to effect flavor (fresh berries, tree fruit such as plums, peaches)?
One way to outthink people is to make them think you think. They'll think you're not really thinking what you're trying to get them to think you think...........

Do an internet search for hydro cooler. There are smaller water chillers for use in green houses and other applications. But we are talking 1/2 hp, mist sprayers with very little volume.

A refrigeration contractor could build or buy a water chiller, but sizing it for your gpm, runtime, temperature of inlet water, chilled water storage, water reclaim... All of these issues would be reason enough to buy an application specific product.

Bury a big water tank in the ground.
