    Need recipe for Cornbread

I like crunchy or hard cornbread not the soft "pound cake" variety. Anyone have a good recipe for cornbread?

    Thanks!

I cut my mix . 50/50 corn meal and fine corn flour and add a little italian bread crumbs. Before their done lightly glaze the tops with beaten egg yolk / honey butter ( homemade). Now you got dem bayou biscuits . Happy cooking !!! Louisiana Cajun/ creole style.

I love sweet cornbread. This is the best I have made. I did have to cook it for 30 minutes.

    SWEET CORN BREAD

    1 c. cornmeal
    2 c. flour
    1 tbsp. baking powder
    1/2 tsp. salt
    1 1/2 c. sugar
    3/4 c. melted butter
    4 eggs, separated
    1 c. milk
    1 tsp. vanilla

Combine egg yolks, milk, vanilla and melted butter. Stir into dry ingredients. In another bowl, beat egg whites until stiff. Fold into batter. Bake in 13 x 9 inch greased pan at 350 degrees for 25 minutes. Do not overbake.
