Philly Cheese steak Sandwich Exchange
Hello.
I am hooked on Philly Cheese steaks, and was posting to see how others make them.
I make them this way.
Have the butcher slice rib eye steaks like thick cut bacon. If the meat is really red, let it age in the fridge for a couple of days.
Warm "Cheese Wiz" in it's jar in a sauce pan of water. This takes a long time.
Saute' red onion, green peppers, red peppers and mushrooms in olive oil.
Using the same pan and oil, fry the steaks for a couple of minutes per side on medium hi heat.
Serve on hoagie buns with choice of toppings, add Cheese Wiz.

I am originally from South Philly.
The store where I used to buy my cheese steaks from cut the meat on a deli slicer just like you do. No frozen, chopped meat. No way.
Believe it or not, it's the bread that actually makes the sandwich. And a good italian roll is hard to find.
I never liked Cheese Wiz. Always called it plastic cheeze. Sellers of cheese steaks in Philly make more money using Wiz than real cheese. Provolone is the way to go.
If you like cheese steaks, get a good quality pizza sauce. Add this and real mozerella to your sandwich and you have a Pizza Steak. My favorite.

djastram, if you ever get to Philly, go to Geno's in South Philly and order "one wiz wit" and you will get what you like. Amazingly enough, Geno's has a sign to order in English or you don't get served, and yet you will get food if you say;
One wiz wit = one cheesewiz cheesesteak with onions and peppers (not just one or the other, must be both).
One American wit, one witout = two American cheese cheesesteakes, one with onions and peppers and one without onions and peppers.
