    Mac and cheese.

    The War Dept. and I were watching TV an a chef was on making Macoroni and cheese. WOW, we said when we watched this recipe being made.

    They posted the recipe on their site. So I talked Mary Lou into making it yesterday. (she is our expert on mac & cheese) It was excellent !

    Here you go!

    Jasper’s Mac and Cheese


    2 tbs butter

    2 ounces of all purpose flour

    2 cup of milk

    1 cup heavy cream

    ½ lb of extra sharp white cheddar cheese

    ¼ teaspoon of nutmeg

    1 bay leaf

    1lb elbow macaroni

    2 cups fresh bread crumbs (we use leftover Hattie’s biscuits. For the more adventuresome see biscuit recipe below)



    Cook macaroni in boiling salted water until aldente. Strain and shock in cold water.

    Melt butter in medium sauce pan.

    Add flour and cook over med-low heat for 2-3 mins. (do not brown)

    Remove pan from heat. Add milk and cream while whisking vigorously.

    Add nutmeg and bay leaf and bring to low simmer over medium heat

    Simmer sauce for 10 min stirring frequently

    Remove from heat and add half of the cheese and season with salt and pepper to taste

    Mix the pasta and the cheese sauce and pour into oven proof dish.

    Mix remaining cheese with the bread or biscuit crumbs and cover the macaroni

    Bake in the oven at 400 until topping is brown and cheese sauce is bubbling.

    Garnish with scallions and Rosemary or herbs of choice.



    Serves 2 for main course or 4 side dishes

    Was it thick and creamy, or lumpy? I've tried a few in the past, and just dry and lumpy.. I gave up.

    This was nice and creamy.

    He said (but its not in the recipe) that you might want to put in a pound of cooked bacon, aoulle sauage or chicken before baking it. Mary Lou put in a pound of bacon. I'd like to try the sauage next time.

    Oh yeah! I forgot to mention. This guy on TV owns a Cajun Restuarant. He's about 7 ft. tall and weights about 400. Makes me look like a cub scout.

    It makes plenty. More like 4 main course servings for 2 days.:

    I'm a big Mac & Cheese fan. I think I know what I will be serving my family for Friday night dinner.
