Wild Game
We've got a wild game butcher around here that has everything from african lion to black bear. He also makes jerkey out of everything imaginable. what have you guys tried on the grill. I was thinking about getting some antelope ribs. I grilled some bear and ostrich burgers today. In my opinion bear is by far better than beef. This guy even has beaver meat

Try Antelope, it's just goat in my opinion. I shot 2 last year, and we suffered through um. Not real good. Get a nice greasy bear steak. MMMMmmmmmmmm

I would buy the beaver over antelope. Very greasy, very rich. We used to cook um with pigs underground. Awesome.

If antelope ribs are anything like deer ribs don't bother, the fat on the ribs of a deer is disgusting. Take the back straps and marinate them for 24 hours or more and cook them whole on the grill, till pink on the inside like prime rib.

I eat Moose and Venison all the time - prefer moose. l Like rabbit as well. Two weeks ago I ate beaver and bear for the first time....both were good. I had elk once (farmed elk ) and really liked it. But I must say Moose is the best, unless you include fish - I love walleye.
