Manitowoc icemaker doing erratic things
As I have tried to share with Manitowoc many years ago, when you are using a DC control circuit, you MUST have a dedicated ground. Therefore " Oh it's grounded through the conduit or the waterline etc..." is incorrect. You should have a dedicated ground wire coming from your panel. With that said, we have been running calls with erratic problems and have been cleaning up and reconnecting the ground post terminal in the control box. This has been working and you may misdiagnose a bad control board which may be telling you things that are not really happening in regards to water probes and harvest issues. Good luck

I had some of those same issues with a manitowoc ice maker going to to harvest to early even with the harvest probe disconnected. I agree they really need to think out some of the control circuits better
