    OH MY!!! Are they great looking or what. How could any red blooded North American not like those.

    I know I'm trying them with some good ol McKensie Vermont sauage meat.

    maybe next week on the fatty.

    i have some people coming over sunday so i decided to play it safe
    and do a butt.

    that sounds just wrong

    i just finished preping some cajun salmon for tomorrow. its in the fridge covered with good stuff right now. kosher salt, brown sugar and some cajun seasoning. i'll use hickory for the fish.

    i'm working on my butt marinade. i got a interesting apple vinegar based cure off the net. i hear thats how they do it in the real bbq land down south.
    i'm just a yankee, but i'm learning i'll probably use apple smoke for that.


    and to make things interesting i'll do the ABT's.
    (atomic bufallo turds) red jalepenos stuffed with cream cheese and wrapped in bacon.


    my poor dog is gonna be in hell smelling that butt cook for 10 hours before she can have some !

    Sounds like your butt might suffer to.

    the salmon and some kbalsa are in the smoker. strange combo but i didn't want to freeze the kbalsa. man that smoke smells good. my bellys churning and i still got 5 more hours.
