Art ya gotta admit that since they changed (geeze I'm dating myself here!) from beef tallow to vegetable oil crawling around underneath that slimy stuff has got a LITTLE better......
Mind you, you've never lived 'till you've had to weld a new 1/2" TXV stub onto a salad table coil in the lunch break......stinking things make your hair and hands reek for two days.
I had a cook one time pass a basket of dripping french fries across my back while down working on a case.......NEVER wore polyester shirts again......melted it right to my back in the oil spots........and I almost got fired from the hotel for what I said to that beeyatch....

I put a txv in a Delfield reach-in the other day, but I got to roll the thing outside to do it. That made the job a lot better.

The freezer that got the defrost module could not be rolled outside, because the range hood where the thing was standing was too low to allow the freezer to clear the lip pf the hood. I wish I had a pic to show you how I looked on the ladder with my head and shoulders squeezed in between the freezer and the hood...

    NO!!!!!!!!!!!!!!!!!!!

    truck sucks it out

first you take a sample for bacteria and enzyme treatment

    then clean by hand!!!!!!!!!!!!!!!!!!

of course any clogs you need to clear using a jetter and sometimes that means going into the city man hole!!!!!!!!!!!!!!!!!!

you will smell like kitchen grease for WEEKS!!!!!!!!!!!!!!!!

you can never get lucky when you smell like kitchen grease!!!!!!!!!!! ever!!!!!!!!!

I guess it is different outside the city. I see a suck truck pull up behind the restaurant, open a manhole, suck it out, spray some cleaning agent, and off they go to the next one.
