When I was a kid my father would swipe some raw hamburger before mother made meat loaf. I liked it too with a little pepper and salt. As my father explained it, "The rich people put a raw egg on it and call it 'steak tartare'.

Then I got into the refrigeration trade. One day I was working in a market and I bumped into the meat grinder and 3 cockroaches ran out of the hopper. Another thing on my list, Earl. No steak tartare.

My whole family thinks this is a treat, mostly during the holidays! I can't even stand to be around it though. They have a little less proper name for it though, "cannibal sandwiches". The name alone gives me the willies.

my old man was from an area in hungary that was german before ww2. the crap he ate that he thought was good and i won't touch - blood sausage, tongue sausage, sulze (a kinda geltinized meat scrap sausage i won't feed my dogs), and beef bone marrow. momma would make a stew with beef bones for flavoring, he would grab the bones when dinner was done, blow thru the bone to get the 'snot' outta it, spread the 'snot' on bread, season with paprika, Mmmmmmmm...... fine dining! (yuck!)

I wonder if sulze is like what americans call souse meat..... something which just goes to show you that if you throw enough spices into it....its edible...

Ive ate souse meat.....its not bad...but its not something I would seek out.
