What is your favorite smoked fish recipe?
I like dry brine with 4 to 1 brown sugar/canning salt.brine for 6-8 hours wash off & dry for 8 hours.(all done in refrigerator)
Then add your favorite flavor & slow smoke with hickory CHUNKS not chips until done.
I really like roasted garlic & crushed bell pepper by McCormic,it makes some tasty fish!
just ask the guys at work I had atleast 6 of them tell me it was the best smoked king they ever had.
