Someone has got to have a design for a zucchini cannon.
I remember the movie "Second Hand Lion's" where they had surplus corn. Shot them by launching in a skeet thrower and got rid of the corn that way. Seems that ought to work with zucchini if you give it a try let us know..
If you still have any excess, try the following...
Slice thin at a 45 degree angle. Lightly coat a pan with olive oil. Spread the zucchini on the pan and drizzle with olive oil. Sprinkle with black pepper, sea salt. basil, oregano, and parmesian. Broil for 10 minutes or so until just beginning to toast. It's incredible!
You can do nearly the same thing on the grill. Put the zucchini on a fish rack to make them easier to handle. Spray with olive oil and sprinkle your favorite spices on top. Flip after three to five minutes, spray with oil, and add spices. Sprinkle with grated parmesian just before serving.
Slice lengthwise and slice the slices to create linguini size strips. Boil as you would pasta. Eat as you would linguini. Think of it as carb free pasta.
