How should I use my surplus of zucchini?
Besides giving it away in the middle of the night to an unsuspecting neighboor.

We have a guy that goes to our Post Office and begs people to take some. Most feel sorry for the guy.
Tracers work both ways.

cut into 1/8" strips. marinade in ital dressing, throw it on the grill.
or
put them in a paper bag. set on neighbors porch. ring bell. run.IV IV IX

zucchini bread is good, also you can shred and freeze

I slice it and use it for lasagna noodles, I made corned beef with it and used zuchinni instead of taters and cabbage. Both good.
My doctor gave me six months to live, but when I couldn't pay the bill he gave me six months more.

My wife will cut in half longways, peel and scoop it out. She then loads it with spaghetti sauce, covers it with cheese and bakes it.

If you still have any excess, try the following...
Slice thin at a 45 degree angle. Lightly coat a pan with olive oil. Spread the zucchini on the pan and drizzle with olive oil. Sprinkle with black pepper, sea salt. basil, oregano, and parmesian. Broil for 10 minutes or so until just beginning to toast. It's incredible!

You can do nearly the same thing on the grill. Put the zucchini on a fish rack to make them easier to handle. Spray with olive oil and sprinkle your favorite spices on top. Flip after three to five minutes, spray with oil, and add spices. Sprinkle with grated parmesian just before serving.

Slice lengthwise and slice the slices to create linguini size strips. Boil as you would pasta. Eat as you would linguini. Think of it as carb free pasta.Matt Michel
