... got eaten yesterday when Key and his wife stopped in. The chicken & sauce recipes were variations of internet recipes modified with a flare. Sorry I missed getting pics.
Herb & Garlic Marinated Chicken with a Balsamic Cream Sauce
Wife's Potato Salad
... oh! and beer.
Herb & Garlic Marinated Chicken Breasts (Capersmarket):
5 clove minced garlic
1 tsp each- basil (I used fresh out of our backyard), thyme, oregano,tarragon
1/2 tsp each- crushed sea salt, milled black pepper.
Zest and juice of 1 1/2 lemon (1 for a less tart marinade)
1/2 cup extra-virgin olive oil
Mix all ingredients well and marinade 6 boneless, skinless chicken breasts for 2 hours on counter or overnight in the fidge. Grill on BBQ until done.
Balsamic Cream Sauce to pour on grilled chicken (all-recipes.com):
2 Tbsp each- extra-virgin olive oil, un-salted butter, balsamic vinegar.
1/4 minced onion
2 tsp dry granulated chicken bouillon
1 cup heavy cream, around 18%
1/2 cup fresh grated parmesan (not Kraft, not EVER Kraft... Okay if that's all you've got)
Melt butter into oil in 1 quart pot, medium low heat. Stir in onion and cook until it is mostly carmelized, dark golden brown, 10-15 minutes Stir in vinegar and cook for an extra minute. Remove from heat and let cool slightly, then mix in bouillon and cream. Bring to a simmer over medium low heat, mixing continuously, remove from heat and stir in parmesan and mix until smooth. pour on already grilled chicken. mmmmm
Wife's potato salad:
Boil mini pototoes til done, split then add mayo, hard boiled egg (cut small but not mashed), prepare mustard, salt, pepper, pickle is you so desire and whatever else your tastes fancies. Anything goes.
Mesclun salad, mesclun mixture, tangerine sections, almond slices, & raspberry vinegarette.
