So I have finally had time and money to do my Jalapeños.
I have taken some pics to give you an idea of how it looks during the process.
So we start off with the Jalapeños and cut em and gut em.

then we stuff the boats with the cream cheese.

Then I wrap them with bacon and throw the skewer through it .

Then I set up the grill. I throw a pan of water (EDIT Thats actually some beer and water) on the side my jalapeños are on and the wood chip box on the other side.

MMMM BBQ sauce

DONE

Use whatever you want for dipping. ( I prefer Ranch)

Let me know how things turn out.

Ok so I am doing more Jalapeños this weekend, WHY you ask. Well it seem our neighbor/baby sitter/friend had a few of mine and I have to make more ( my wife told me) Apparently I am making 60 tomorrow. So I havnt even taken off my work clothes off yet and showered. Seems though I need to get my shizzle in gear and start prepping these things.
I have added photo's to this thread for those that dont know.Last edited by Wolfer; 08-29-2008 at 10:27 PM.

Thanks for the idea. It was worth all the seeds flying all over the place and the burning eyes when u rub them with your hands.

This looks too good not to try. Next weekend I know what I'll be doing....
I made 6 dozen tamales and a few chile rellenos this week end. I've been laying around stuffed all day today

Instead of Cream Cheese, try Neufchatel. Its very similar to Cream Cheese with about 1/3 of the calories. I like the taste better.
I do mine on a Big Green Egg and I always use center cut bacon.
If you rinse with water, and add some salt to the inside of the pepper, they wont be quite as hot.

I always do them upright and stuff them with ANYTHING. Chicken livers with bacon wrapped over the top, fresh sausage, salmon spread ... the combinations are limitless and good

We use the same recipe, but with half a dove breast, and a onion slice. The only way to eat dove. Thought I would add that in case anyone has doves in the freezer.
