Bison
Bison tastes incredibly good. Is usually free range and organic. Has not been aggressively bred for countless generations to grow fast and fat like beef.

Never had any. If it tastes anything like deer I wouldnt like it. Does it?

Elements of both Venison and Steakhouse
Bison has some taste of venison and steakhouse steak.
Not gamey, but lower fat. It does not taste like they spend time in the feedlot. Much better then most deer. Similar to the kind of steak good enough to bring repeat customers to a steakhouse.
Also closer to grass fed beef directly from the farmer.

I know of a Bison farm about 2 hours from me. Great meat.

Buffalo meat/Bison
Alot of the beef markets here in Fort Worth area, are really pushing the Bison and I have only tried it once and was not impressed with the taste.
Some of the options:
Healthy
Lower cholestral
Less fat
cheaper/NOT $$$
taste great/NOT
Sounds like ~~^~~ bull**** to me.
