    I just injected two big fan hens

    with hot wing sauce and placed them on a smoker with no wood chips. I will report back on this

    what kind of smoker are you using?

    Electric but I made a mistake in the type chickens I bought. Apparently baking hens are not for baking. Those things are as tough as leather.
