The mexicans cook it here in their little roach coaches. Pretty tender meat, like more tender than say spam. Tastes good but a weird texture. Soft and a little fatty. They call it lengua. I don't get it that often, but it's good for a change.

You can get brains too. I think they call it ceribro. I've never tried it.

To be honest Tongue is the only part of the animal that I can't stomack.

You know I have eaten bull balls. I will eat them again next year when I'm out there. Also I love stewed beef kidneys, scambled eggs and pig brains, deer heart and liver. But I doesn't like the tongue slipped to me.
