We just bought a home with a gas fireplace. We really do not want it there, because we have babies and are worried about burns and such. Is there a special way to wall it off????

If you really want to wall it off I would have the gas piping disconnected from the appliance and have a plug installed in the gas line before it enters a cocealed space.
Another option is to purchase a child safety screen if it is available from the manufacture and keep the value there.

Just shut the gas off to it.
