    Brandied Peaches

In Western New York, and Northern PA, the peaches are ready. Picked fresh and ripe off the tree, you have to capture their goodness. I like to can about 10 quarts with brandy and vanilla. I keep them in the basement, dark and cool till Christmas. Serve them up with home-made ice cream on the Christmas holidays... a taste of summer for your loved ones.

For dessert, I like them room temperature, served with vanilla ice cream.

Also they can be served as a side with pan fried pork chops, using the juice to de-glaze the pan. Add a few pats of butter, render the sauce down, and serve over the chops. Killer!

Could you please provide a recipe. Colorado has a bumper crop of very fine fresh peaches this year. Perfect weather year for them. I tried to google a recipe and it was 4lbs peaches and 4lbs of sugar with a pint of brandy. Sounds pretty sweet.
