hoshi ice machine
i need some clarifacation on harvest assist
where does the water come from to assist the harvest is it new water pumped in or is it right straight from the sump and the left over water from the ice making cycle, please help i'm so confusedonce you think you've seen it all

The water assist for the harvest is new water from the solenoid valve usually in the top middle to the right of the evaporator. Scotsman CM machines and old AC and others use new incoming water to help drop the ice. If the water doesn't come fast enough the ice has a real hard time dropping. I believe the figure Scotsman uses is 70% of the heat for harvest comes from the incoming water. This is why Scotsmans and Hoshis hate winter because the water can be too cold to assist in harvest. Up here in the frozen wasteland about 1/3 of my winter calls are thawing out frozen up Hoshis and Scotsmans.
