    Frying food.

    I've been working on breading for mostly fish and have been experimenting with brown rice flour instead of wheat. Last week I was in S. Mo and had the best catfish I can remember. The breading had to be rice flour.
    Near perfect. So I'm back to 1 cup brown rice flour, 1 cup beer, 1 egg. But I might try just egg whites.
    The brown rice flour browns up faster so it's harder to tell when done.
    Oh ya, peanut oil.
    I should mention I've tried both boxed breading, and scratch but I'm looking for that perfect one.

    I note you have tried boxed breading. Panko works well if it's one you have not tried.

    If you can't fix it with JB Weld, Duct Tape, and Ty Wire it has to be replaced.

    I have tried Panko and like it but can't handle the sodium. Once I cut back on salt many packaged foods are just too salty. I was also looking to use whole grains. White flour is hard to beat but so much information says to try to avoid overly processed grains. My biggest sacrifice is fresh oven baked white bread.

    I like Don's Chuckwagon onion ring mix. I cut it with beer instead of water.
