Simple Nacho Cheese Dip
This one is easy to do and is pretty good too.
All you need is:
2lbs of Velveeta
1 4oz can of Ortega Diced Jalapenos
1 can of Black Olives
Cayanne Pepper (to taste)
Slice the olives and save the olive juice. Melt the Velveeta in a saucepan then add the entire can of jalapenos with it's juice (you can use the olive juice to help thin it out some). Add the cayanne (as much or little as you like) and let it simmer for 10-20 minutes but be sure to stir it constantly so it doesn't scorch (nasty!!). Enjoy with whatever chips you like!!
Oh yea, it gets better after a couple of days in the fridge!

Go ahead and try another type of cheese if you want. What type of cheese do you think they use on nachos at the stadium?

Agree that Velveta is not exactly the best cheese for nacho dip, but most folks like it.
Here is another way: Melt velveta, add one (or two) cans of Rotel peppers. Stir until blended. Great dip!GA-HVAC-Tech

Velveeta taste good and it makes a good "cheesey sause" but it ain't cheese. Sorry. Mostly vegetable oil.
Get a block of Cabot if you want cheese.

THAT IS MY NORM!!! I sometimes spice it up a bit with diced halepenos, diced green chilies, and ''''la costena'''' that is a mexican version of 'pace' that I buy at mexican stores here in Texas. I am open to other opinions.
'Plate nachos' are also killer, try this: Spread chips on plate, slice velveeta in thin strips across all, top with diced mild green chiles[jalepenos if you gather the taste for hot]. Microwave about 2 minutes, watch for cheese to be melted. We like the same caso, so you will probably like this favorite of mine also.

It says "simple" nacho cheese. My Aunts make it with Cheeze Whiz

and I never knew and liked it. When I found out I was like "WTF????? They still make that crap?"My doctor gave me six months to live, but when I couldn't pay the bill he gave me six months more.
