I got 50 lbs. of free baby red poatoes and created this recipe yesterday. Everybody loved it. The ingredients are approximate.
1/2 cup olive oil
4 cloves garlic, minced
fresh ground black pepper
8 lbs. baby red potatoes, halved
Mix all ingredients and let potatoes marinate for about an hour. Cook over medium indirect heat for 1-1/2 to 2 hours until tender and browned, turning often. The entire exterior should be crispy and delicious.
