Dirty Refrigerators
This Delfield prep table has drawers that hold the food. Once we pull the drawers and the drawer racks for service, we get to see all the leftovers...


Here is a Delfield undercounter cooler. Sucks air up the condenser fan grill and blows it out the condenser coil. So the condenser is always clean, and the fan grill is always dirty. At this point, I usually just throw the fan grill in the trash.

Here is a custom undercounter prep table with a Heatcraft evaporator. Not looking pretty...

Looks about right. I'm suprised the fan guard isn't broken and the fan covered in plastic wrap.

I still have never seen a clean prep table unless it was less than a year old

Those delfields are the worst. Crappy coils, cheap construction and over all p.i.t.a. ..... at a big name national restaurant chain I used to do there were custom coolers with heatcraft evaps mounted behind the drawers. What a pain in the arse to get to these evaps. The drawer frames weighed a ton, screws typically rusted away to nothing. Seals broken. Junk

Had plenty like that, worst was a mouldy mouse stuck on evap coil. Of course none of the food in the prep table was covered.
