    Simed up Hoshi

This was the one of the dirtiest machines I have seen in years. I didn't get any pictures past this point because I didn't want to touch my phone with my nasty hands.

That is some nasty looking black algae, is this machine by a bakery or around yeast? I'm curious to see what the hoses and the water distributors look like.

It is in a pizza place next to the dough mixing station! It was completely down on long freeze. I don't know if the float was what gave up first, or the clogged distribution header and water guides. It looked as if several rows were getting no water at all, so that is likely what caused the long freezes.

Ok, well that's typical. I take care of 9 pizza places and I've seen some similar looking things. In most cases, unless I'm the guy taking care of the PM work, the pizza restaurants don't do any Preventive Maintenance. They just call when things go down and then they have to pay much more due to neglect.
