I remember being humiliated for using the term "two phase" by a journeyman

Any literature on this?
Am I being told that we Americans are wearing dunce caps and should be sent to the corner?

Google two phase and you will find that indeed there is such a thing. Not common anymore but there are systems referred to as two phase. Not sure how you used the term, but many people incorrectly call a residential 120/240 service two phase. If you heard that you could have learned it wrong before you had the chance to learn it in trade school.
PS. When a Journeyman humiliates an apprentice it just means he is unsure of his own sexual orientation.
SMALL people humiliate others, BIG people mentor others.
When a Journeyman shows no mercy when an apprentice messes up, how much mercy do you think he will get when he needs it? And trust me, one day he WILL need it...
