What did you set the control at and why? You're 100% sure temp is controlled by pressure and not a thermostat?
First post so i will try to give as much information as i can. It is a Traulsen reach in double door cooler it is using R-22. The call i recieved was the unit had frozen the cheese in the cooler. My attempt to adjust the pressure controller did nothing so i replaced the pressure controller. So i turned the machine back on to check my superheat to make sure my charge was correct. Until the unit got down to temp it was running about 40 degrees superheat as soon as it got down to temp it came down to 14 degrees and was running fine. The problem i am having i left my thermometer on the suction line and as soon as the machine would shut off the suction temp line temperature would shoot up and the short cycling of the machine would start till eventually it is not cooling the cooler. By the way this is like my 3 call.

ditto on what 2 sac said. Look for the wiring diagram. I rarely see a factory box that controls temp with a pressure switch. I have used pressure switches to control the temp in the past and once you set it up you never have issues unless there is a leak.
I don't remember pressure switches on the r22 traulsens or the newer ones. Did the original control go bad, and someone added the pressure switch after the fact?
If original call was frozen product adjusting pressure switch, if used as temp control, down would make that problem worse. Lower pressure setting would equal lower temp. I'm with the other guys. I doubt the pressure switch is intended to control temp. Better take a look at wiring diagram and see what supposed to be going on and go from there.
went looking for a wiring diagram and of course there is none to be found i have e-mailed the manufactor to get one. To answer a few questions that i left out when i got there the pressure control spring appeared to be bent from from being twisted in to far. Also i did find a small leak on one of the flare fittings on the TXV so i tightened that up. As for the pressure settings 68 high because i wanted 40 as a make temp and 43 low to give me 20 degrees across the evaporator. why i believe its presssure controlled power goes straight to the pressure controller and out of that to the compressor start windings.
The pressure control was probally welded shut from all its short cycling. Buy a cold control!!
I have a lot of old McCall pizza retarders and older pizza make tables using a Ranco low pressure switch for temp control. I've gotten good at setting them up and they work great. Mostly R414B, R409A or R134. The newer R404 units use the Ranco ETC 111-000. I set the Cut IN at about 36F--38F with a 18F dif works well in my equipment. Maybe a little on the cold side but I'd rather have a cold complaint rather than an above 40F call.

If your suction line is getting warm/hot immediately after stopping, you have bad valves. Need a new compressor.
