Those are for Altitude adjustment. Really shouldn't mess with them until above 2000 ft.

    Why change the setings?

I have successfully tweaked some, but it is a PITA. It's way easier to screw it up than to accomplish anything good. Get the cut in too low and you'll freeze the coil. Adjusting either screw seems to change the whole range. It's not like you're setting a cut in and a cut out. The mechanical operations inside the thermostat are so tiny and easily FUBAR'd that I'm amazed they can be as reliable as they are.

I usually keep the a12 1560 or 1506 with coiled bulb , they are 39 deg for preps, but also keep the delfield style ( less expensive) which is 41 deg for coolers with lettuce so it dont freeze

The standard Delfield mechanical stat part number 2194536 has a 37f cut in, 20f cut out (it is just an A12-700 with capillary coiled into a pigtail.]

Which delfield thermostat did you use?

I adjust them all the time with no issues. Generally it's only the cut out that needs adjustment. The factory setting sometimes causes freeze issues with low carb or sugar free beverage products. See it a lot on True coolers.
