TRUE condensate

I worked on a reach in cooler today and now I have a couple of questions for you refer guys. Is it normal to have a cooler that runs on 404a? I have seen plenty of freezers with this refrigerant, but I think this is the first cooler. This is a milk cooler. Trying to maintain 38-40*. My second question is What is the cardboard thing in the condensate pan? Is that supposed to wic the water up into condenser fan air stream? Also I noticed when I put unit into defrost the condenser fans reversed rotation. Why does it do this? I don't work on many reach ins but if I don't ask I'll never learn. Thanks for any input.

404 is a better low temp refrigerant and that box is capable of maintaining 33F
At a lower cooler temp they feel 404 is the best choice.
Yes card board speeds up evaporation
From air the is moving from condenser.
Reversing the fan
They feel that reversing the condenser fan each time it goes on defrost
Will keep the condenser cleaner
Blows out what it sucks in.
