    Smoked a fatty

    Smoked a couple of fatties for me and my techs. We had a webinar on Thursday and thought it would be great for lunch. The fatties are stuffed with eggs and cheese. I sliced them up and put them on English muffins with holladaise sauce. Smoke them at 250 degrees for 3 hours with jack daniels wood chips. Enjoy, Steve

    They are awesome. Check out smokingmeatforum.com You can put anything in them. I think I saw one with apples and pancakes in one. One word of advise, use thin bacon for the wrap. Thick bacon is just too much and you can fell a heart attack coming on.

    Im gonna try one. What is the meat ratio? 1lb of ground to 1lb of bacon? I usually use apple and cherry simply because they are abundant up here. We dont have any Bass Pro Shops so i have to order the Jack Daniels chips online. Ive used them before and they are awesome.

    Im thinking of using chedder and pepper jack cheese.

    Yes 1 lb and 1lb. I just used the jack Daniels because my girlfriend bought me a bag for Christmas. Also, Christmas morning I made a couple with ground venison which turned out awesome too. Next time I make em, I'm going the spread the cheese out on the sausage more, so there will be cheese in every bite.

    Wrap a lettuce leaf around a carrot and secure with a smoked toothpick.

    Nice Job. If there is any left over, does it reheat well or does it fall apart?

    It reheats good. The only problem is there is hardly any leftovers. My son ate what was left and he tore it up.
