The best thing to do is ask questions. The easiest way to learn is by using your hands. Starting out as a helper is the best way to go. You will pick up simple "Tricks of the trade" along the way.

Jump the sensor out then force a defrost. Make sure there is 24v on red coming into the board. If nothing happens. Replace the sensor and defrost board.

That secondary looks normal. Yea Carriers are notorious for scaling in the secondary. I would check manifold pressure and check to see if flames jump around when the blower cycles. Do a C.O. test. Is...

Yes and more than likely it is the 3 wire pilot or if its a old enough gas valve could be that. Do you know how to jump out the 3 wire pilot?

I always like to cut old compressors out. Use a coupling and short pipe to braze it back in. That crap will def choke you out.
